Stuffed Avocado

Don’t forget (no pun intended) about the little fish when you’re looking to boost your memory. Sardines, anchovy, and mackerel are all rich in brain-friendly omega-3 fatty acids including docosahexanoic acid (DHA), which is shown to be important for memory. Try them in this stuffed avocado recipe we created for our Free Health Services! It is a delicious snack or light meal that is also a great source of vitamin E. Research suggests that foods high in vitamin E such as avocado (high in vitamin C as well) are correlated with a reduced risk of developing Alzheimer’s.

Ingredients

1/2 cup BPA-free canned sardines

¼ cup peeled and diced cucumber

1 Tbs olive-oil based Veganaise (definition: Veganaise is a conventionally available dairy and egg-free mayonnaise)

1 Tbs lemon juice

1 tsp chopped fresh dill

1 avocado

black pepper to taste

chopped chives

Instructions

1. In a bowl, mix the sardines (or tuna), cucumber, mayonnaise, lemon juice, and dill. Season with pepper. Cover, and chill until serving.

2. Slice the avocados lengthwise, and remove the pit by firmly embedding a heavy knife in the it and twisting. Scoop out the flesh of the avocado, leaving about 1/2 inch on the peel.

3. Spoon the seafood mixture into the hollowed centers of the avocado halves. Sprinkle the tops with chopped dill.

Variation

If you are alright with dairy, try 1 Tbs of plain Greek yogurt instead of Veganaise for an even healthier, additive-free recipe!
